TRAINING OF TRAINERS IN VEGAN AND VEGETARIAN CUISINE

In the context of the implementation of Activity 1.24 “Development, launch and implementation of projects for the creation of the continuous training system (CVET)” of the project “DevRAM”, Part I, in the Vocational School of Bubuieci will be launched a new continuing education program – “Vegan cuisine and vegetarian ”. It will be integrated in the professional training process for the specialty “Chef”, based on the curriculum developed within the project.

Thus, on October 28, the start of the three days of training of trainers for this course was given, the training being structured in three modules: “Healthy eating”, “Vegetarian and vegan food” and “Organization of public kitchens and modern service” , attended by 6 people. The training from the first day was provided online, on the Zoom platform, the second module was taught in a location in Căpriana (October 29), and for the last session (November 5) the school laboratory from Bubuieci was chosen.

The approach of the trainer Tamara Șchiopu, a well-known nutritionist, promoter of vegan and vegetarian cuisine, author of several vegetarian and fasting recipe books, aims to familiarize trainees with the basic notions of general nutrition, vegetarian and vegan, but also with others types of alternative food; with products beneficial to human health, including eco / natural; with the reactions of the human body to certain foods, products (allergies, intolerances); with obvious and hidden ingredients; with eco and vegan agriculture, etc., and even with economic aspects of food. Particular attention will be paid to the organization of public kitchens and modern service, this intervention focusing on the analysis of technology sheets, standard menus, as well as local, seasonal or budget, on other information of primary importance for this area.

The theoretical material is seconded by interactive exercises and homework, by demonstrating methods of preparation, by sharing tempting recipes and for all budgets. The master class with the generic “Seasonal vegan menu on a budget”, held in Căpriana, was very “colorful and rich in flavors”, culminating in a food tasting.

For the subsequent and lasting promotion of the training course for trainers in vegan and vegetarian food, the activities are recorded, and a video will be edited.

Alternative cuisine is a way of life and gathers more and more supporters around it. Many restaurants, cafes, canteens, etc. they have included in their menu vegan and vegetarian dishes, there are also specialized places. So it is a kitchen that has its client and for which staff must be prepared.

European Union Project “Development of Rural Areas in the Republic of Moldova” (DevRAM), Part I. “Increasing the competitiveness of the agri-food sector by integrating it into domestic and global value chains, especially the soybean crop sector”, implemented by the Austrian Development Cooperation in partnership with PRO DIDACTICA Educational Center and Donau Soja International Association (Austria), aims to contribute to increasing the sector’s capacity to assert itself on the internal and external market, as well as to strengthening the capacity of technical vocational education institutions in the agri-food field and completes Moldova’s component. within the framework of the Strategic Partnership organized at regional level between CAD and Donau Soja, which supports the construction of sustainable and inclusive value chains for organic and non-genetically modified soybeans in Bosnia and Herzegovina, Serbia, Moldova and Ukraine.

În contextul implementării Activităţii 1.24  ”Dezvoltarea, lansarea şi implementarea proiectelor de creare a sistemului de pregătire continuă (CVET)” a proiectului ”DevRAM”, Partea I, în Şcoala Profesională din Bubuieci va fi lansat un nou program de formare continuă  – ”Bucătărie vegană şi vegetariană”. Acesta va fi  integrat în procesul de pregătire profesională la specialitatea ”Bucătar”, având la bază curriculumul elaborat în cadrul proiectului.

Astfel, pe 28 octombrie curent, a fost dat startul celor trei zile de formare de formatori pentru acest curs, trainingul fiind structurat în trei module: ”Alimentaţia sănătoasă”, ”Alimentaţia vegetariană şi vegană” şi ”Organizarea bucătăriilor publice şi a deservirii moderne”, la care participă 6 persoane. Instruirea din prima zi a fost furnizată online, pe platforma Zoom, cel de-al doilea modul a fost predat într-o locaţie din Căpriana (29 octombrie), iar pentru ultima sesiune (5 noiembrie) a fost ales laboratorul şcolii din Bubuieci.

Demersul formatoarei Tamara Şchiopu, o binecunoscută nutriţionistă, promotoare a bucătăriei vegane şi vegetariene, autoare a câtorva cărţi de reţete vegetariene şi de post, şi-a propus să familiarizeze formabilii cu noţiunile de bază de nutriţie generală, vegetariană şi vegană, dar şi cu alte tipuri de alimentaţie alternativă; cu produsele benefice sănătăţii omului, inclusiv eco/naturale; cu reacţiile organismului uman la anumite alimente, produse (alergii, intoleranţe); cu ingredientele evidente şi cele ascunse; cu agricultura eco şi cea vegană etc., şi chiar cu aspecte economice ale alimentaţiei. O atenţie aparte va fi acordată organizării bucătăriilor publice a deservirii moderne, această intervenţie axându-se pe analiza fişelor tehnologice, a meniurilor-standard, precum şi a celor locale, de sezon sau la buget, pe alte informaţii de primă importanţă pentru această sferă.

Materialul teoretic este secondat de exerciţii interactive şi de teme pentru acasă, de demonstrarea unor metode de prepare, de împărtăşirea unor reţete ademenitoare şi pentru toate buzunarele. Master-class-ul cu genericul ”Meniu vegan de sezon la buget”, desfăşurat la Căpriana, a fost foarte ”colorat şi bogat în arome”, acesta încununându-se cu o degustare de bucate.

Pentru promovarea ulterioară şi de durată a cursului de pregătire a formatorilor în alimentaţia vegană şi vegetariană, activităţile sunt înregistrate, urmând a fi montat un video.

Bucătăria alternativă este un mod de viaţă şi adună în jurul ei tot mai mulţi simpatizanţi. Multe restaurante, cafenele, cantine etc. au incluse în meniul lor preparate vegane şi vegetariene, există şi localuri specializate. Deci este o bucătărie care îşi are clientul şi pentru care trebuie pregătite cadre.

Susţine educaţia agricolă!

 Proiectul Uniunii Europene ”Dezvoltarea zonelor rurale în Republica Moldova” (DevRAM), Partea I. ”Creşterea competitivităţii sectorului agroalimentar prin integrarea acestuia în lanţurile valorice interne şi globale, în special a sectorului culturii de soia”, implementat de Cooperarea Austriacă pentru Dezvoltare, în parteneriat cu Centrul Educaţional PRO DIDACTICA şi Asociaţia Internaţională Donau Soja (Austria), îşi propune să contribuie la sporirea capacităţii de afirmare a sectorului pe piaţa internă şi externă, precum şi la fortificarea capacităţii instituţiilor din învăţământul profesional tehnic din domeniul agroalimentar şi completează componenta Moldovei în cadrul Parteneriatului Strategic organizat la nivel regional între CAD şi Donau Soja, care sprijină construirea unor lanţuri valorice durabile şi incluzive pentru soia ecologică şi nemodificată genetic în Bosnia şi Herţegovina, Serbia, Moldova şi Ucraina.
